Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan with butter or non-stick spray, and optionally line the bottom with parchment paper.
- In a large bowl, whisk together 2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
- In another bowl, beat 1/2 cup of softened butter and 1 cup of sugar until light and fluffy (about 3-4 minutes).
- Add 2 eggs one at a time, mixing well after each addition, then stir in 1 teaspoon of vanilla extract.
- Gradually add the dry mixture to the butter mixture, alternating with 1 cup of milk, starting and ending with the flour mixture. Mix until just combined.
- Gently fold in 3 cups of diced apples.
- In a separate bowl, combine 1 cup of flour, 1/2 cup of brown sugar, 1 teaspoon of cinnamon, and 1/4 teaspoon of salt.
- Stir in 1/2 cup of melted butter until the mixture resembles coarse crumbs.
- Spread the apple batter evenly in the prepared baking pan.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 10-15 minutes.
- Carefully transfer the cake to a wire rack to cool completely.
- Once cool, slice into squares and serve. Enjoy warm or at room temperature, with optional vanilla ice cream or whipped cream.
