  • 3 cups peeled and diced apples (about 3 medium apples)
  • 1 cup all-purpose flour (for crumb topping)
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter or non-stick spray, and optionally line the bottom with parchment paper.
  3. In a large bowl, whisk together 2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  4. In another bowl, beat 1/2 cup of softened butter and 1 cup of sugar until light and fluffy (about 3-4 minutes).
  5. Add 2 eggs one at a time, mixing well after each addition, then stir in 1 teaspoon of vanilla extract.
  6. Gradually add the dry mixture to the butter mixture, alternating with 1 cup of milk, starting and ending with the flour mixture. Mix until just combined.
  7. Gently fold in 3 cups of diced apples.
  8. In a separate bowl, combine 1 cup of flour, 1/2 cup of brown sugar, 1 teaspoon of cinnamon, and 1/4 teaspoon of salt.
  9. Stir in 1/2 cup of melted butter until the mixture resembles coarse crumbs.
  10. Spread the apple batter evenly in the prepared baking pan.
  11. Sprinkle the crumb topping evenly over the batter.
  12. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  13. Let the cake cool in the pan for 10-15 minutes.
  14. Carefully transfer the cake to a wire rack to cool completely.
  15. Once cool, slice into squares and serve. Enjoy warm or at room temperature, with optional vanilla ice cream or whipped cream.
