Description

These beef burritos are a delicious combination of seasoned ground beef, black beans, and rice, all wrapped in a soft tortilla and topped with melted cheese and salsa. Perfect for a hearty meal any day!

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 4 large flour tortillas
  • 1 cup sour cream (optional, for serving)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  2. Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.
  3. Increase the heat to medium-high and add the ground beef to the skillet. Use a wooden spoon to break it apart as it cooks. Cook until the beef is browned and no longer pink, about 5-7 minutes.
  4. Once the beef is cooked, drain any excess fat from the skillet. Return the skillet to the heat and add the chili powder, cumin, paprika, salt, and pepper. Stir well to combine and cook for another 2 minutes to let the spices bloom.
  5. Remove the skillet from the heat and stir in the cooked rice and black beans. Mix until everything is evenly combined. Taste and adjust seasoning if necessary.
  6. Lay a large flour tortilla flat on a clean surface or a large plate.
  7. In the center of the tortilla, spoon about 1/4 of the beef filling mixture. Be careful not to overfill, as this will make it difficult to roll the burrito.
  8. Sprinkle about 1/4 cup of shredded cheddar cheese over the beef filling.
  9. Drizzle a couple of tablespoons of salsa over the cheese for added flavor.
  10. To roll the burrito, fold in the sides of the tortilla over the filling, then starting from the bottom, roll it up tightly until the filling is completely enclosed. Make sure to tuck in the sides as you roll to keep everything secure.
  11. Repeat the process with the remaining tortillas and filling until all burritos are assembled.
  12. Preheat your oven to 350°F (175°C) if you plan to bake the burritos. Alternatively, you can also pan-fry them for a crispy exterior.
  13. If baking, place the assembled burritos seam-side down in a greased baking dish. You can pour additional salsa over the top and sprinkle with more cheese if desired.
  14. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  15. If pan-frying, heat a non-stick skillet over medium heat. Add a little olive oil to the pan. Place the burritos seam-side down in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
  16. Once the burritos are cooked, remove them from the oven or skillet and let them cool for a minute or two.
  17. Serve the burritos warm with a dollop of sour cream on the side, and sprinkle with fresh cilantro for a burst of color and flavor.
  18. Feel free to add extra salsa, guacamole, or any of your favorite toppings to customize your burrito experience!
