Description

This Bruschetta Dip features a delightful mix of fresh cherry tomatoes, basil, and mozzarella, served on crispy toasted bread. It’s a colorful and flavorful appetizer, perfect for any gathering or cozy night in. Enjoy it warm with a drizzle of balsamic vinegar and olive oil for an extra burst of taste!

Ingredients

Scale
  • 1 French baguette or Italian bread, sliced into 1/2-inch pieces
  • 2 cups cherry tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 1/2 cup mozzarella cheese, diced or shredded
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional for a kick)
  • 1/4 cup grated Parmesan cheese (optional for extra flavor)

Instructions

  1. Wash the cherry tomatoes thoroughly and dice them into small pieces.
  2. Chop the fresh basil leaves finely using the chiffonade method.
  3. In a large mixing bowl, combine the diced tomatoes and chopped basil.
  4. Add the minced garlic to the bowl.
  5. Pour in the balsamic vinegar and olive oil, stirring gently to combine.
  6. Season with salt and pepper to taste, adding red pepper flakes if desired.
  7. If using, fold in the Parmesan cheese for added flavor.
  8. Preheat your oven to 400°F (200°C).
  9. Arrange the sliced baguette or Italian bread on a baking sheet, leaving space between each slice.
  10. Drizzle olive oil over each slice, using a brush or spoon to spread it evenly.
  11. Toast the bread in the oven for about 8-10 minutes, or until golden brown and crispy.
  12. Remove from the oven and let cool slightly. Optionally, rub a cut garlic clove over the top of each slice.
  13. Spoon the bruschetta mixture into a large bowl or create individual servings on each slice of toasted bread.
  14. Include all the juices from the bottom of the bowl for maximum flavor.
  15. Drizzle additional balsamic vinegar or olive oil over the assembled dip.
  16. Garnish with extra fresh basil leaves or a sprinkle of Parmesan cheese if desired.
  17. Serve the bruschetta dip immediately while the bread is still warm and crispy.
  18. Pair with a chilled glass of white wine or sparkling water for a delightful experience.

Notes

  • For a spicier kick, increase the amount of red pepper flakes.
  • This dip is best enjoyed fresh, as the bread can become soggy if left too long.
