  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Sprinkle Cajun seasoning evenly over both sides of the chicken breasts.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
  4. Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
  5. Remove the chicken from the skillet and let it rest for 5 minutes.
  6. Bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to package instructions until al dente (about 8-10 minutes).
  7. Reserve 1 cup of pasta water, then drain the fettuccine and set aside.
  8. In the same skillet, reduce heat to medium and add butter. Let it melt.
  9. Add minced garlic and sauté for about 1 minute until fragrant.
  10. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  11. Gradually whisk in grated Parmesan cheese until melted and creamy. Adjust thickness with reserved pasta water if needed.
  12. Season with salt and pepper to taste.
  13. Slice the rested chicken into strips or bite-sized pieces.
  14. Add cooked fettuccine to the skillet with the sauce, tossing to coat evenly.
  15. Fold in halved cherry tomatoes and spinach leaves, allowing the heat to wilt the spinach.
  16. Add sliced chicken on top and gently toss everything together.
  17. Taste and adjust seasoning if necessary.
  18. Serve hot, garnished with freshly chopped parsley.
  19. Optionally, sprinkle additional Parmesan cheese on top before serving.
