- 1 cup grated Parmesan cheese
- 1 cup cherry tomatoes, halved

Instructions
- Pat the chicken breasts dry with paper towels.
- Sprinkle Cajun seasoning evenly over both sides of the chicken breasts.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
- Cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
- Remove the chicken from the skillet and let it rest for 5 minutes.
- Bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to package instructions until al dente (about 8-10 minutes).
- Reserve 1 cup of pasta water, then drain the fettuccine and set aside.
- In the same skillet, reduce heat to medium and add butter. Let it melt.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Gradually whisk in grated Parmesan cheese until melted and creamy. Adjust thickness with reserved pasta water if needed.
- Season with salt and pepper to taste.
- Slice the rested chicken into strips or bite-sized pieces.
- Add cooked fettuccine to the skillet with the sauce, tossing to coat evenly.
- Fold in halved cherry tomatoes and spinach leaves, allowing the heat to wilt the spinach.
- Add sliced chicken on top and gently toss everything together.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with freshly chopped parsley.
- Optionally, sprinkle additional Parmesan cheese on top before serving.
