  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 1/2 cup crushed graham crackers
  • 1/4 cup chopped nuts (optional, walnuts or pecans)
  • 1/4 cup caramel sauce (for drizzling)
  • 1 tbsp lemon juice (to prevent browning of apples)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash the apples thoroughly under cold water and pat them dry.
  3. Carefully remove the core from each apple, leaving the bottom intact.
  4. Drizzle a little lemon juice inside each apple to prevent browning.
  5. In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat until smooth and creamy (2-3 minutes).
  6. Add brown sugar, vanilla extract, ground cinnamon, and salt. Mix until well incorporated.
  7. Add sour cream and mix until fully combined.
  8. Fold in crushed graham crackers and chopped nuts (if using).
  9. Stuff each apple with the cheesecake mixture, packing it gently but firmly.
  10. Place the stuffed apples upright in a baking dish, spooning any leftover filling around them.
  11. Cover the baking dish with aluminum foil and bake for 25-30 minutes until apples are tender.
  12. Remove the foil and bake for an additional 10-15 minutes to brown the tops.
  13. Let the apples cool for about 10 minutes before serving.
  14. Drizzle with caramel sauce and serve with vanilla ice cream or whipped cream if desired.
