- 2 boneless, skinless chicken breasts
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 slices of your favorite bread (sourdough, whole wheat, or white)
- 2 tablespoons butter, softened
- 1 cup fresh spinach or lettuce (optional)
- Tomato slices (optional)
- Pickles (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness of about 1 inch. Season both sides with salt, pepper, garlic powder, and onion powder.
- Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- In a medium mixing bowl, combine softened cream cheese, mayonnaise, and Dijon mustard. Mix until smooth.
- Stir in the shredded cheddar and mozzarella cheese until evenly distributed.
- Once the chicken is done, let it rest for 5 minutes, then slice it into thin strips or cubes.
- Spread a generous amount of the cheese mixture on one side of each slice of bread.
- Layer the sliced chicken over the cheese mixture on two slices of bread. Add spinach or lettuce, tomato slices, and pickles if desired.
- Top with the remaining slices of bread, cheese side down.
- In a clean skillet, melt the remaining butter over medium heat. Place the assembled sandwiches in the skillet.
- Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes on the other side.
- Remove from the skillet and let cool for a minute before slicing.
