  • 2 boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 slices of your favorite bread (sourdough, whole wheat, or white)
  • 2 tablespoons butter, softened
  • 1 cup fresh spinach or lettuce (optional)
  • Tomato slices (optional)
  • Pickles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness of about 1 inch. Season both sides with salt, pepper, garlic powder, and onion powder.
  3. Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  5. In a medium mixing bowl, combine softened cream cheese, mayonnaise, and Dijon mustard. Mix until smooth.
  6. Stir in the shredded cheddar and mozzarella cheese until evenly distributed.
  7. Once the chicken is done, let it rest for 5 minutes, then slice it into thin strips or cubes.
  8. Spread a generous amount of the cheese mixture on one side of each slice of bread.
  9. Layer the sliced chicken over the cheese mixture on two slices of bread. Add spinach or lettuce, tomato slices, and pickles if desired.
  10. Top with the remaining slices of bread, cheese side down.
  11. In a clean skillet, melt the remaining butter over medium heat. Place the assembled sandwiches in the skillet.
  12. Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes on the other side.
