  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil the lasagna noodles in a large pot of salted water according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
  2. Drain and rinse the noodles under cold water. Lay them flat on a clean kitchen towel or parchment paper to cool.
  3. In a large mixing bowl, combine ricotta cheese, shredded chicken, half of the grated Parmesan cheese, and half of the shredded mozzarella cheese.
  4. Add garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  5. Preheat your oven to 375°F (190°C). Spread 1 cup of Alfredo sauce evenly on the bottom of a 9×13 inch baking dish.
  6. Take one lasagna noodle and spoon 2-3 tablespoons of the chicken and cheese mixture onto it, spreading it evenly while leaving an inch at each end.
  7. Roll the noodle tightly but gently, seam-side down in the baking dish. Repeat with remaining noodles and filling.
  8. Pour the remaining Alfredo sauce over the top of the rolls, ensuring they are completely covered.
  9. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the sauce.
  10. Cover the baking dish with aluminum foil (avoiding contact with cheese) and bake for 25 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes, or until cheese is bubbly and golden brown.
  12. Insert a knife into the center of the dish; if it comes out hot, the lasagna rolls are ready.
  13. Let the rolls rest for 10 minutes before serving. Garnish with freshly chopped parsley and serve warm.
