Description

Creamy garlic baby potatoes are a delicious side dish featuring tender baby potatoes enveloped in a rich garlic sauce. This easy-to-make recipe is perfect for any meal and is sure to impress your guests with its flavorful combination of cream, garlic, and herbs.

Ingredients

Scale
  • 1.5 pounds baby potatoes, washed and halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the baby potatoes thoroughly under cold running water to remove any dirt or debris. There’s no need to peel them; the skin adds texture and flavor.
  2. Cut the potatoes in half to ensure even cooking and better sauce coating.
  3. Set the halved potatoes aside while preparing the sauce.
  4. In a large skillet or saucepan, melt the butter over medium heat.
  5. Add the minced garlic and sauté for 1-2 minutes until fragrant and slightly golden, being careful not to burn it.
  6. Pour in the heavy cream and chicken or vegetable broth, stirring to combine. Let the mixture bubble gently.
  7. Add the dried thyme and rosemary, seasoning with salt and pepper to taste. Start with about 1/2 teaspoon of salt and a pinch of pepper.
  8. Let the sauce simmer for about 5 minutes, stirring occasionally to prevent sticking.
  9. Add the halved baby potatoes to the skillet, ensuring they are well coated with the sauce.
  10. Cover the skillet with a lid, reduce the heat to low, and let the potatoes cook for 20-25 minutes, stirring occasionally.
  11. Check for doneness by piercing the potatoes with a fork; they should be tender. If needed, cover and cook for an additional 5-10 minutes.
  12. Stir in the grated Parmesan cheese until melted and the sauce becomes rich and creamy.
  13. Taste and adjust seasoning if necessary, adding extra salt or pepper as desired.
  14. Remove from heat and let sit for a couple of minutes to thicken.
  15. Spoon the creamy garlic baby potatoes onto a serving platter or individual plates, drizzling some sauce over the top.
  16. Garnish with freshly chopped parsley for color and freshness.
  17. Serve alongside grilled meats, roasted chicken, or as a hearty vegetarian side, paired with a crisp green salad.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of broth or cream if needed to loosen the sauce.
