  • 1 pound of salmon fillets, skinless and boneless
  • 1 cup of panko breadcrumbs
  • 1/2 cup of all-purpose flour
  • 2 large eggs
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional, for heat)
  • 1/2 cup of mayonnaise
  • 2 tablespoons of sweet chili sauce
  • 1 tablespoon of sriracha (adjust to taste)
  • 1 tablespoon of lime juice
  • Fresh cilantro, chopped (for garnish)
  • Vegetable oil (for frying)

Instructions

  1. Cut the salmon fillets into bite-sized pieces, about 1 to 1.5 inches in size. Pat them dry with paper towels.
  2. In a shallow bowl, mix together the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper.
  3. In a second shallow bowl, whisk the eggs until well combined.
  4. In a third shallow bowl, add the panko breadcrumbs.
  5. Coat each salmon piece in the flour mixture, then dip it in the beaten eggs, and finally roll it in the panko breadcrumbs. Place the breaded pieces on a plate.
  6. In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix until smooth and creamy. Adjust sriracha to taste.
  7. In a large skillet, heat enough vegetable oil to cover the bottom of the pan over medium-high heat.
  8. Fry the breaded salmon bites in batches for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels.
  9. Arrange the cooked salmon bites on a serving platter. Drizzle with Bang Bang sauce or serve it on the side for dipping. Garnish with chopped cilantro and serve with lime wedges if desired.

  • For a healthier option, bake the salmon bites at 400°F (200°C) for 15-20 minutes instead of frying.
