- 1 pound of salmon fillets, skinless and boneless
- 1 cup of panko breadcrumbs
- 1/2 cup of all-purpose flour
- 2 large eggs
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper (optional, for heat)
- 1/2 cup of mayonnaise
- 2 tablespoons of sweet chili sauce
- 1 tablespoon of sriracha (adjust to taste)
- 1 tablespoon of lime juice
- Fresh cilantro, chopped (for garnish)
- Vegetable oil (for frying)
Instructions
- Cut the salmon fillets into bite-sized pieces, about 1 to 1.5 inches in size. Pat them dry with paper towels.
- In a shallow bowl, mix together the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper.
- In a second shallow bowl, whisk the eggs until well combined.
- In a third shallow bowl, add the panko breadcrumbs.
- Coat each salmon piece in the flour mixture, then dip it in the beaten eggs, and finally roll it in the panko breadcrumbs. Place the breaded pieces on a plate.
- In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix until smooth and creamy. Adjust sriracha to taste.
- In a large skillet, heat enough vegetable oil to cover the bottom of the pan over medium-high heat.
- Fry the breaded salmon bites in batches for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels.
- Arrange the cooked salmon bites on a serving platter. Drizzle with Bang Bang sauce or serve it on the side for dipping. Garnish with chopped cilantro and serve with lime wedges if desired.
Notes
- For a healthier option, bake the salmon bites at 400°F (200°C) for 15-20 minutes instead of frying.
- Adjust the level of spiciness in the Bang Bang sauce by modifying the amount of sriracha.
