  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon (optional)
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream
  • 1/4 cup hot sauce (preferably Louisiana hot sauce)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the russet potatoes (you can leave the skins on if desired).
  3. Cut the potatoes into thin strips, about 1/4 inch thick.
  4. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
  5. Drain the potatoes and pat them dry with a clean kitchen towel.
  6. In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, oregano, thyme, salt, and pepper.
  7. Toss the dried potato strips with the olive oil and spice mixture until evenly coated.
  8. Line a baking sheet with parchment paper or a silicone baking mat.
  9. Spread the seasoned potato strips in a single layer on the baking sheet.
  10. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  11. Remove the fries from the oven and sprinkle shredded cheddar cheese over the hot fries.
  12. If using, add crumbled bacon on top of the cheese.
  13. Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  14. Prepare garnishes by chopping green onions.
  15. Drizzle sour cream over the fries and finish with hot sauce to taste.
  16. Sprinkle chopped green onions on top.
  17. Transfer the fries to a serving platter or individual bowls.
  18. Serve hot with extra hot sauce and sour cream on the side for dipping.
