- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled bacon (optional)
- 1/4 cup sliced green onions
- 1/2 cup sour cream
- 1/4 cup hot sauce (preferably Louisiana hot sauce)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the russet potatoes (you can leave the skins on if desired).
- Cut the potatoes into thin strips, about 1/4 inch thick.
- Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
- Drain the potatoes and pat them dry with a clean kitchen towel.
- In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, oregano, thyme, salt, and pepper.
- Toss the dried potato strips with the olive oil and spice mixture until evenly coated.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Spread the seasoned potato strips in a single layer on the baking sheet.
- Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Remove the fries from the oven and sprinkle shredded cheddar cheese over the hot fries.
- If using, add crumbled bacon on top of the cheese.
- Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
- Prepare garnishes by chopping green onions.
- Drizzle sour cream over the fries and finish with hot sauce to taste.
- Sprinkle chopped green onions on top.
- Transfer the fries to a serving platter or individual bowls.
- Serve hot with extra hot sauce and sour cream on the side for dipping.
Notes
- Adjust the amount of cayenne pepper based on your heat preference.
- For extra flavor, consider adding other toppings like jalapeños or avocado.
- These fries are best enjoyed fresh out of the oven for maximum crispiness.
