Instructions
- Preheat your oven to 400°F (200°C).
- Place chicken breasts between two sheets of plastic wrap or parchment paper. Pound to an even thickness of about 1 inch.
- Season both sides of the chicken breasts with salt and pepper.
- In a shallow bowl, mix together Parmesan cheese, breadcrumbs, garlic powder, onion powder, and dried Italian herbs.
- In another bowl, whisk the two large eggs until well combined.
- Place all-purpose flour in a third shallow dish.
- Coat each chicken breast in flour, shaking off excess.
- Dip the floured chicken into the egg wash, ensuring full coverage.
- Press the chicken into the breadcrumb mixture, coating thoroughly on both sides.
- Repeat the breading process for all chicken breasts and place them on a plate or baking sheet.
- In a large oven-safe skillet, heat olive oil (or melted butter) over medium heat.
- Add the breaded chicken to the skillet and cook for 3-4 minutes on each side until golden brown.
- Move the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
- Use a meat thermometer to ensure the chicken is cooked through.
- Let the chicken rest for about 5 minutes after removing from the oven.
- Chop fresh parsley for garnish.
- Plate the chicken, garnish with parsley, and serve with lemon wedges.
