Instructions
- Cut the chicken into bite-sized pieces (about 1-inch cubes) and place in a large bowl. Season with salt, pepper, paprika, and dried Italian herbs. Add red pepper flakes if desired. Toss to coat and let sit for 10-15 minutes.
- In a large skillet, melt the unsalted butter over medium heat.
- Once the butter is melted and bubbling, add the minced garlic. Sauté for 1-2 minutes until fragrant and golden, being careful not to burn it.
- Add the seasoned chicken pieces to the skillet, stirring to coat in the garlic butter.
- Increase heat to medium-high and cook the chicken for 5-7 minutes, stirring occasionally, until it reaches an internal temperature of 165°F (75°C) and is no longer pink.
- Squeeze the juice of one lemon over the cooked chicken and stir to combine.
- Taste the chicken and adjust seasoning with more salt, pepper, or lemon juice as desired.
- Remove from heat, sprinkle with chopped parsley, and serve hot. Enjoy over rice, pasta, or with crusty bread.
