Ingredients

Scale
  • 1 pound rigatoni pasta
  • 2 tablespoons olive oil
  • 1 pound sirloin steak, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add rigatoni pasta and cook according to package instructions until al dente (10-12 minutes). Stir occasionally.
  3. Drain the pasta and toss with a little olive oil to prevent sticking.
  4. Season sirloin steak pieces with salt and pepper.
  5. In a large skillet, heat olive oil over medium-high heat.
  6. Add steak pieces in a single layer and sear for 3-4 minutes on each side until browned. Remove and let rest.
  7. In the same skillet, reduce heat to medium and melt unsalted butter, scraping up browned bits.
  8. Sauté minced garlic for 1-2 minutes until fragrant.
  9. Add red pepper flakes (if using) and stir for a minute.
  10. Add beef broth and simmer for 3-4 minutes.
  11. Stir in heavy cream and simmer for another 3-5 minutes until thickened.
  12. Gradually add grated Parmesan cheese, stirring until melted and smooth.
  13. Return cooked steak to the skillet and stir to coat in the sauce.
  14. Add drained rigatoni and toss gently to coat. Add pasta water if needed to loosen the sauce.
  15. Adjust seasoning with salt, pepper, or more Parmesan as desired.
  16. Serve the dish onto plates or bowls, ensuring each serving has steak and sauce.
  17. Sprinkle with freshly chopped parsley before serving.

Notes

  • For added flavor, consider marinating the steak in your favorite spices before cooking.
  • Adjust the amount of red pepper flakes based on your heat preference.
  • This dish can be made ahead of time; just reheat gently on the stove before serving.
