  • 1 tablespoon olive oil
  • 4 cloves garlic, minced

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 tablespoon fresh parsley, chopped (optional)
  • 4 large flour tortillas
  • 1 cup fresh spinach leaves
  • 1/2 cup diced tomatoes
  • 1/4 cup ranch dressing (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the chicken breasts in half horizontally to create thinner cutlets.
  3. In a large bowl, mix olive oil, minced garlic, paprika, salt, and pepper to create a marinade.
  4. Coat the chicken cutlets in the marinade and let them sit for at least 15 minutes (up to 1 hour in the fridge for more flavor).
  5. Heat a large skillet over medium-high heat and add more olive oil if needed.
  6. Cook the marinated chicken cutlets for 5-7 minutes on each side until golden brown and cooked through.
  7. Remove the chicken from the skillet and let it rest for a few minutes.
  8. In a medium bowl, combine shredded mozzarella, shredded cheddar, and softened cream cheese.
  9. Mix until well combined, adding chopped parsley if desired.
  10. Slice the rested chicken into thin strips.
  11. Lay a flour tortilla flat and place a handful of spinach in the center.
  12. Add a few slices of chicken on top of the spinach.
  13. Spoon a generous amount of the cheese mixture over the chicken.
  14. Sprinkle diced tomatoes and drizzle ranch dressing if using.
  15. Fold the sides of the tortilla inwards and roll from the bottom up to create a tight wrap.
  16. Repeat for the remaining tortillas and filling.
  17. For baking, place wraps seam-side down on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown and cheese is melted.
  18. For grilling, heat a grill pan over medium heat and cook wraps seam-side down for 3-4 minutes on each side until crispy.
  19. Let the wraps cool for a minute, then slice each in half diagonally.
