- 2 large chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1 tablespoon fresh parsley, chopped (optional)
- 4 large flour tortillas
- 1 cup fresh spinach leaves
- 1/2 cup diced tomatoes
- 1/4 cup ranch dressing (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the chicken breasts in half horizontally to create thinner cutlets.
- In a large bowl, mix olive oil, minced garlic, paprika, salt, and pepper to create a marinade.
- Coat the chicken cutlets in the marinade and let them sit for at least 15 minutes (up to 1 hour in the fridge for more flavor).
- Heat a large skillet over medium-high heat and add more olive oil if needed.
- Cook the marinated chicken cutlets for 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes.
- In a medium bowl, combine shredded mozzarella, shredded cheddar, and softened cream cheese.
- Mix until well combined, adding chopped parsley if desired.
- Slice the rested chicken into thin strips.
- Lay a flour tortilla flat and place a handful of spinach in the center.
- Add a few slices of chicken on top of the spinach.
- Spoon a generous amount of the cheese mixture over the chicken.
- Sprinkle diced tomatoes and drizzle ranch dressing if using.
- Fold the sides of the tortilla inwards and roll from the bottom up to create a tight wrap.
- Repeat for the remaining tortillas and filling.
- For baking, place wraps seam-side down on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown and cheese is melted.
- For grilling, heat a grill pan over medium heat and cook wraps seam-side down for 3-4 minutes on each side until crispy.
- Let the wraps cool for a minute, then slice each in half diagonally.
- Serve with extra ranch dressing or your favorite dipping sauce.
