- 2 pounds of potatoes (Yukon Gold or Russet)
- 1 medium onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon baking powder
- Vegetable oil (for frying)
- Applesauce or sour cream (for serving)
Instructions
- Peel the potatoes and rinse them under cold water to remove excess starch.
- Grate the potatoes using a box grater or food processor until finely grated.
- Place the grated potatoes in a clean kitchen towel or cheesecloth, gather the corners, and squeeze out as much moisture as possible.
- Peel and grate the onion, then combine it with the grated potatoes in a large mixing bowl.
- Add the eggs to the potato and onion mixture, whisking them lightly before mixing in.
- Sprinkle in the flour, salt, black pepper, garlic powder (if using), and baking powder. Mix until well combined; the mixture should be thick but not dry.
- Let the batter sit for about 10 minutes to allow flavors to meld.
- Heat a large skillet or frying pan over medium-high heat and add enough vegetable oil to coat the bottom.
- Once the oil is hot, scoop some batter into the pan, flattening it slightly to form a pancake shape. Cook 3-4 pancakes at a time.
- Fry for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes on the other side.
- Transfer cooked pancakes to a plate lined with paper towels to absorb excess oil. Repeat with remaining batter.
- Stack the pancakes on a warm plate, keeping them warm in a low oven if needed.
- Serve with applesauce or sour cream, and garnish with fresh chives or parsley if desired.

- For extra crispy pancakes, ensure to squeeze out as much moisture from the grated potatoes as possible.
