  • 1 pound boneless, skinless chicken breasts
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions

  1. Cut the chicken breasts into bite-sized pieces, about 1 to 1.5 inches in size.
  2. In a large mixing bowl, combine olive oil, minced garlic, salt, black pepper, paprika, and Italian seasoning. Whisk until well blended.
  3. Add the chicken pieces to the bowl and toss until fully coated. Cover and let marinate in the refrigerator for at least 30 minutes (or longer for enhanced flavor).
  4. If using wooden skewers, soak them in water for at least 30 minutes. If using metal skewers, skip this step.
  5. Assemble the skewers by threading the marinated chicken pieces onto them, alternating with vegetables if desired.
  6. Preheat the grill to medium-high heat. Lightly oil the grates to prevent sticking.
  7. Place the chicken skewers on the grill and cook for about 10-12 minutes, turning every few minutes until the chicken reaches an internal temperature of 165°F (75°C) and has grill marks.
  8. During the last few minutes of cooking, sprinkle grated Parmesan cheese over the skewers to melt slightly.
  9. Remove the skewers from the grill and place them on a serving platter. Sprinkle with chopped parsley and serve warm.

  • For added heat, consider marinating the chicken with a pinch of red pepper flakes or serving with a spicy dipping sauce.
  • For a smoky flavor, add soaked wood chips to your charcoal grill.
