Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk together to ensure even mixing.
  2. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
  3. Fold in the shredded cheddar cheese and diced ham, distributing them evenly throughout the mixture.
  4. Gradually add the cold water, one tablespoon at a time, mixing gently with a fork until the dough starts to come together. Avoid overworking the dough.
  5. Turn the dough out onto a lightly floured surface and knead gently a few times until smooth. Shape into a disc, wrap in plastic wrap, and refrigerate for about 30 minutes.
  6. After chilling, let the dough sit for a few minutes to soften slightly. Roll it out on a floured surface into a rectangle about 1/4 inch thick.
  7. Cut the dough into smaller rectangles or squares, approximately 3 inches by 5 inches.
  8. Place a small amount of the ham and cheese mixture in the center of each rectangle, being careful not to overfill.
  9. Fold the dough over the filling to create a pocket. Press the edges together firmly and crimp with a fork for a secure seal.
