- In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk together to ensure even mixing.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
- Fold in the shredded cheddar cheese and diced ham, distributing them evenly throughout the mixture.
- Gradually add the cold water, one tablespoon at a time, mixing gently with a fork until the dough starts to come together. Avoid overworking the dough.
- Turn the dough out onto a lightly floured surface and knead gently a few times until smooth. Shape into a disc, wrap in plastic wrap, and refrigerate for about 30 minutes.
- After chilling, let the dough sit for a few minutes to soften slightly. Roll it out on a floured surface into a rectangle about 1/4 inch thick.
- Cut the dough into smaller rectangles or squares, approximately 3 inches by 5 inches.
- Place a small amount of the ham and cheese mixture in the center of each rectangle, being careful not to overfill.
- Fold the dough over the filling to create a pocket. Press the edges together firmly and crimp with a fork for a secure seal.
- Repeat with the remaining dough and filling. Preheat the oven to 400°F (200°C).
- Place the assembled sticks on a baking sheet lined with parchment paper.
- Brush the tops with the beaten egg and sprinkle with sesame seeds if desired.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.
