  • 8 oz (225g) rice noodles
  • 1 lb (450g) beef sirloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 1 carrot, julienned
  • 3 green onions, chopped
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Boil a large pot of water. Add the rice noodles and cook according to package instructions (4-6 minutes) until tender but still al dente.
  2. Drain the noodles in a colander and rinse under cold water to stop cooking. Set aside.
  3. In a bowl, combine thinly sliced beef sirloin with 1 tablespoon soy sauce, a pinch of salt, and pepper. Mix well and let marinate for 10-15 minutes.
  4. In a small bowl, whisk together hoisin sauce, remaining 1 tablespoon soy sauce, rice vinegar, and sesame oil until well blended.
  5. Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Add marinated beef in a single layer and sear for 2-3 minutes without stirring.
  6. Stir-fry the beef for an additional 2-3 minutes until cooked through. Remove from skillet and set aside.
  7. In the same skillet, add minced garlic and grated ginger. Sauté for 30 seconds until fragrant.
  8. Add sliced red bell pepper, snap peas, and julienned carrot. Stir-fry for 3-4 minutes until tender-crisp.
  9. Return the beef to the skillet and pour the hoisin sauce mixture over the beef and vegetables. Toss to coat evenly and cook for an additional 2-3 minutes.
  10. Add cooked rice noodles to the skillet and gently toss to combine. If too dry, add a splash of water or more soy sauce.
  11. Taste and adjust seasoning with salt, pepper, or more hoisin sauce if desired.
  12. Remove from heat and serve hot, garnished with chopped green onions and sesame seeds if desired.
