- 8 oz (225g) rice noodles
- 1 lb (450g) beef sirloin, thinly sliced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 cup snap peas, trimmed
- 1 carrot, julienned
- 3 green onions, chopped
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Boil a large pot of water. Add the rice noodles and cook according to package instructions (4-6 minutes) until tender but still al dente.
- Drain the noodles in a colander and rinse under cold water to stop cooking. Set aside.
- In a bowl, combine thinly sliced beef sirloin with 1 tablespoon soy sauce, a pinch of salt, and pepper. Mix well and let marinate for 10-15 minutes.
- In a small bowl, whisk together hoisin sauce, remaining 1 tablespoon soy sauce, rice vinegar, and sesame oil until well blended.
- Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Add marinated beef in a single layer and sear for 2-3 minutes without stirring.
- Stir-fry the beef for an additional 2-3 minutes until cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and grated ginger. Sauté for 30 seconds until fragrant.
- Add sliced red bell pepper, snap peas, and julienned carrot. Stir-fry for 3-4 minutes until tender-crisp.
- Return the beef to the skillet and pour the hoisin sauce mixture over the beef and vegetables. Toss to coat evenly and cook for an additional 2-3 minutes.
- Add cooked rice noodles to the skillet and gently toss to combine. If too dry, add a splash of water or more soy sauce.
- Taste and adjust seasoning with salt, pepper, or more hoisin sauce if desired.
- Remove from heat and serve hot, garnished with chopped green onions and sesame seeds if desired.
