  • 8 oz (225g) rice noodles
  • 1 lb (450g) beef sirloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 1 carrot, julienned
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • Sesame seeds for garnish (optional)

Instructions

  1. Boil a large pot of water. Add the rice noodles and cook according to package instructions (4-6 minutes) until tender but al dente.
  2. Drain the noodles and rinse under cold water to stop cooking. Set aside.
  3. In a medium bowl, combine sliced beef with 1 tablespoon soy sauce, 1 tablespoon hoisin sauce, and a pinch of black pepper. Mix well and let marinate for 15-20 minutes.
  4. Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Add marinated beef in a single layer and sear for 2-3 minutes on each side until browned. Remove and set aside.
  5. In the same skillet, add more oil if needed, then sauté minced garlic and grated ginger for 30 seconds until fragrant.
  6. Add sliced red bell pepper, snap peas, and julienned carrot. Stir-fry for 3-4 minutes until tender-crisp.
  7. Return the beef to the skillet. Pour in remaining hoisin sauce, soy sauce, rice vinegar, and sesame oil. Stir to coat and cook for an additional 2-3 minutes.
  8. Add cooked rice noodles and gently toss to combine. If too dry, add a splash of water or more soy sauce.
  9. Remove from heat and sprinkle with chopped green onions. Toss gently.
  10. Serve hot, garnished with sesame seeds and extra green onions if desired.
