A quick and flavorful Hoisin Beef Noodle Stir-Fry featuring tender beef sirloin, colorful vegetables, and rice noodles in a savory hoisin sauce. Ideal for a satisfying weeknight dinner!

- 8 oz (225g) rice noodles
- 1 lb (450g) beef sirloin, thinly sliced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 cup snap peas, trimmed
- 1 carrot, julienned
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 green onions, chopped
- Sesame seeds for garnish (optional)
Instructions
- Boil a large pot of water. Add the rice noodles and cook according to package instructions (4-6 minutes) until tender but al dente.
- Drain the noodles and rinse under cold water to stop cooking. Set aside.
- In a medium bowl, combine sliced beef with 1 tablespoon soy sauce, 1 tablespoon hoisin sauce, and a pinch of black pepper. Mix well and let marinate for 15-20 minutes.
- Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Add marinated beef in a single layer and sear for 2-3 minutes on each side until browned. Remove and set aside.
- In the same skillet, add more oil if needed, then sauté minced garlic and grated ginger for 30 seconds until fragrant.
- Add sliced red bell pepper, snap peas, and julienned carrot. Stir-fry for 3-4 minutes until tender-crisp.
- Return the beef to the skillet. Pour in remaining hoisin sauce, soy sauce, rice vinegar, and sesame oil. Stir to coat and cook for an additional 2-3 minutes.
- Add cooked rice noodles and gently toss to combine. If too dry, add a splash of water or more soy sauce.
- Remove from heat and sprinkle with chopped green onions. Toss gently.
- Serve hot, garnished with sesame seeds and extra green onions if desired.

- For a complete meal, serve with steamed broccoli or a fresh cucumber salad.
