- 2 cups of jasmine rice
- 4 boneless, skinless chicken breasts
- 1 cup of honey
- 1 cup of BBQ sauce (your favorite brand)
- 2 tablespoons of soy sauce
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of smoked paprika
- Salt and pepper to taste
- 1 cup of chicken broth
- 1 tablespoon of chopped fresh parsley (for garnish)
- Optional: sliced green onions for garnish
Instructions
- In a medium-sized bowl, combine the honey, BBQ sauce, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until well blended.
- Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap. Let it marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours.
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes. After 15 minutes, turn off the heat and let it sit, covered, for another 10 minutes.
- Preheat your grill or grill pan over medium-high heat, ensuring it’s well-oiled.
- Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.
- Place the chicken on the grill. Cook for about 6-7 minutes on one side without moving.
- Flip the chicken and cook for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Optionally, baste with fresh marinade during the last few minutes.
- Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.
- Fluff the cooked rice with a fork and divide it among serving plates.
- Slice the grilled chicken into strips or bite-sized pieces and place on top of the rice.
- Drizzle any remaining BBQ sauce over the chicken. Optionally, drizzle a bit more honey for extra sweetness.
- Garnish with chopped fresh parsley and sliced green onions if desired.
- Serve warm, paired with steamed vegetables or a fresh garden salad. The sweetness of the honey and smokiness of the BBQ sauce complement the rice beautifully.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop, adding a splash of water or broth to keep the rice moist.
