  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (about 110°F or 43°C)
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Extra flour for dusting
  • Olive oil for greasing

Instructions

  1. In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Mix well to ensure even distribution of salt.
  3. Once the yeast mixture is frothy, add it to the flour mixture along with the olive oil. Mix until a shaggy dough forms.
  4. Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Add more flour if the dough is too sticky.
  5. Shape the dough into a ball and place it in a greased bowl. Cover with a kitchen towel or plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. After the dough has risen, punch it down gently to release the air and transfer it back to the floured surface.
  7. Sprinkle the shredded mozzarella, grated Parmesan, oregano, basil, garlic powder, onion powder, and crushed red pepper flakes (if using) over the dough.
  8. Fold the dough over itself a few times to incorporate the cheese and herbs evenly. Knead gently for another 2-3 minutes.
  9. Divide the dough into two equal portions. Flatten each portion slightly and roll tightly from one end to the other to shape into loaves.
  10. Pinch the seams to seal and tuck the ends under to create a nice shape.
  11. Place the loaves onto a baking sheet lined with parchment paper or a greased loaf pan, leaving space between them.
  12. Cover with a kitchen towel and let them rise for another 30-45 minutes, or until puffed up.
  13. Preheat your oven to 375°F (190°C).
  14. Optionally, brush the tops of the loaves with olive oil for a golden crust.
  15. Bake for 25-30 minutes, or until golden brown and hollow-sounding when tapped on the bottom.
  16. Remove from the oven and let cool on a wire rack for about 10 minutes before slicing.
