  • 1 lb thinly sliced ribeye steak (or sirloin)
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 oz cream cheese, softened
  • 1 cup shredded provolone cheese (or mozzarella)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 large zucchini (for the roll-ups)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers, sautéing for about 5-7 minutes until soft and slightly caramelized.
  2. Add the thinly sliced ribeye steak to the skillet. Season with garlic powder, salt, and pepper. Cook for about 3-4 minutes, stirring frequently until browned and cooked through.
  3. Stir in the Worcestershire sauce, Italian seasoning, and red pepper flakes (if using). Mix well and cook for an additional minute. Remove from heat and let cool slightly.
  4. In a medium bowl, combine the softened cream cheese, shredded provolone cheese, and grated Parmesan cheese. Mix until fully incorporated.
  5. Fold the cooled steak and vegetable mixture into the cheese mixture until evenly distributed.
  6. Wash the zucchini thoroughly. Using a vegetable peeler or mandoline slicer, slice the zucchini lengthwise into thin strips (about 1/8 inch thick).
  7. Sprinkle a little salt on the zucchini strips and let them sit for about 10 minutes to draw out excess moisture.
  8. Pat the zucchini strips dry with a paper towel to remove moisture and salt.
  9. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  10. Take one zucchini strip and place about 2 tablespoons of the steak and cheese filling at one end. Roll tightly around the filling and place seam side down on the baking sheet.
  11. Repeat with remaining zucchini strips and filling, spacing the roll-ups evenly on the baking sheet.
  12. Optionally, sprinkle extra shredded cheese on top of the roll-ups for added flavor.
  13. Bake in the preheated oven for about 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  14. Remove from the oven and let cool for a few minutes before serving.
