- 1 lb thinly sliced ribeye steak (or sirloin)
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 oz cream cheese, softened
- 1 cup shredded provolone cheese (or mozzarella)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1 large zucchini (for the roll-ups)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers, sautéing for about 5-7 minutes until soft and slightly caramelized.
- Add the thinly sliced ribeye steak to the skillet. Season with garlic powder, salt, and pepper. Cook for about 3-4 minutes, stirring frequently until browned and cooked through.
- Stir in the Worcestershire sauce, Italian seasoning, and red pepper flakes (if using). Mix well and cook for an additional minute. Remove from heat and let cool slightly.
- In a medium bowl, combine the softened cream cheese, shredded provolone cheese, and grated Parmesan cheese. Mix until fully incorporated.
- Fold the cooled steak and vegetable mixture into the cheese mixture until evenly distributed.
- Wash the zucchini thoroughly. Using a vegetable peeler or mandoline slicer, slice the zucchini lengthwise into thin strips (about 1/8 inch thick).
- Sprinkle a little salt on the zucchini strips and let them sit for about 10 minutes to draw out excess moisture.
- Pat the zucchini strips dry with a paper towel to remove moisture and salt.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Take one zucchini strip and place about 2 tablespoons of the steak and cheese filling at one end. Roll tightly around the filling and place seam side down on the baking sheet.
- Repeat with remaining zucchini strips and filling, spacing the roll-ups evenly on the baking sheet.
- Optionally, sprinkle extra shredded cheese on top of the roll-ups for added flavor.
- Bake in the preheated oven for about 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
