- 2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped nuts (optional)
Instructions
- In a medium saucepan, combine the granulated sugar, cocoa powder, and salt. Stir until well mixed.
- Add the unsalted butter and heavy cream to the saucepan. Place over medium heat and stir continuously until the butter melts and the mixture is smooth (about 5-7 minutes).
- Bring the mixture to a gentle boil and allow it to boil for 2 minutes without stirring.
- Remove from heat and stir in the vanilla extract.
- Add the mini marshmallows and stir until completely melted and incorporated.
- If using, fold in chocolate chips or nuts.
- Line an 8×8 inch square baking dish with parchment paper, leaving overhang on the sides.
- Pour the fudge mixture into the prepared baking dish and spread evenly.
- Drop a few extra mini marshmallows on top and swirl them into the fudge using a toothpick or skewer.
- Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or freeze for 1-2 hours.
- Once firm, lift the fudge out of the baking dish using the parchment paper.
- Place on a cutting board and cut into squares.
- Optionally, sprinkle sea salt on top for a sweet and salty combination.
- Transfer to a serving platter or store in an airtight container in the refrigerator.
