Ingredients

  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. In a medium saucepan, combine the granulated sugar, cocoa powder, and salt. Stir until well mixed.
  2. Add the unsalted butter and heavy cream to the saucepan. Place over medium heat and stir continuously until the butter melts and the mixture is smooth (about 5-7 minutes).
  3. Bring the mixture to a gentle boil and allow it to boil for 2 minutes without stirring.
  4. Remove from heat and stir in the vanilla extract.
  5. Add the mini marshmallows and stir until completely melted and incorporated.
  6. If using, fold in chocolate chips or nuts.
  7. Line an 8×8 inch square baking dish with parchment paper, leaving overhang on the sides.
  8. Pour the fudge mixture into the prepared baking dish and spread evenly.
  9. Drop a few extra mini marshmallows on top and swirl them into the fudge using a toothpick or skewer.
  10. Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or freeze for 1-2 hours.
  11. Once firm, lift the fudge out of the baking dish using the parchment paper.
  12. Place on a cutting board and cut into squares.
  13. Optionally, sprinkle sea salt on top for a sweet and salty combination.
  14. Transfer to a serving platter or store in an airtight container in the refrigerator.
