  • 1 cup all-purpose flour
  • 1/2 cup shredded cheddar cheese

  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped chives or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a standard muffin tin with cooking spray or line it with muffin liners.
  3. In a large mixing bowl, mix together the mashed potatoes, melted butter, milk, and eggs until smooth and creamy.
  4. In a separate bowl, whisk together the flour, baking powder, garlic powder, onion powder, salt, and pepper.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  6. Fold in the shredded cheddar and grated Parmesan cheese. Optionally, add cooked bacon bits or diced ham for extra flavor.
  7. Fill each muffin cup about 3/4 full with the batter.
  8. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
