- 1/4 cup milk

- 1 cup cooked sausage, crumbled
- 6 large flour tortillas (10-inch size)
- 2 tablespoons olive oil or butter (for cooking)

Instructions
- In a large mixing bowl, crack the 6 large eggs. Check for any shell pieces.
- Add 1/4 cup of milk to the eggs for fluffiness.
- Sprinkle in 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust seasoning to taste.
- Whisk the mixture vigorously until fully combined and slightly frothy (about 1-2 minutes).
- Heat a skillet over medium heat and add the crumbled sausage.
- Cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Break it into small pieces as it cooks.
- Remove the sausage from the skillet and set aside on a paper towel-lined plate.
- In the same skillet, reduce heat to medium-low and add 1 tablespoon of olive oil or butter.
- Pour the egg mixture into the skillet and let it sit for a few seconds to set the edges.
- Gently stir the eggs with a spatula, pushing from the edges toward the center until mostly cooked but still slightly runny (about 3-4 minutes).
- Sprinkle the cooked sausage and shredded cheddar cheese over the eggs. Gently fold to combine and allow the cheese to melt (1-2 minutes).
- Place a large flour tortilla on a clean surface.
- Spoon a generous amount of the egg, sausage, and cheese mixture onto the center of the tortilla (about 1/3 of the width).
- Fold the sides inward, then roll tightly from the bottom to enclose the filling, tucking in the sides as you go.
- Repeat with remaining tortillas and filling.
- In the same skillet, add another tablespoon of olive oil or butter and heat over medium heat.
- Place the roll-ups seam-side down in the skillet (in batches if necessary).
- Cook for 2-3 minutes on each side until golden brown and crispy. Use tongs to flip carefully.
- Remove from skillet and place on a paper towel-lined plate to absorb excess oil.
- Slice each roll-up in half diagonally for presentation.
- Serve warm with salsa or hot sauce on the side. Add fresh avocado or sour cream for extra flavor.
