  • 1/4 cup milk

  • 1 cup shredded cheddar cheese
  • 1 cup cooked sausage, crumbled
  • 6 large flour tortillas (10-inch size)
  • 2 tablespoons olive oil or butter (for cooking)
  • Optional: salsa or hot sauce for serving

Instructions

  1. In a large mixing bowl, crack the 6 large eggs. Check for any shell pieces.
  2. Add 1/4 cup of milk to the eggs for fluffiness.
  3. Sprinkle in 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust seasoning to taste.
  4. Whisk the mixture vigorously until fully combined and slightly frothy (about 1-2 minutes).
  5. Heat a skillet over medium heat and add the crumbled sausage.
  6. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Break it into small pieces as it cooks.
  7. Remove the sausage from the skillet and set aside on a paper towel-lined plate.
  8. In the same skillet, reduce heat to medium-low and add 1 tablespoon of olive oil or butter.
  9. Pour the egg mixture into the skillet and let it sit for a few seconds to set the edges.
  10. Gently stir the eggs with a spatula, pushing from the edges toward the center until mostly cooked but still slightly runny (about 3-4 minutes).
  11. Sprinkle the cooked sausage and shredded cheddar cheese over the eggs. Gently fold to combine and allow the cheese to melt (1-2 minutes).
  12. Place a large flour tortilla on a clean surface.
  13. Spoon a generous amount of the egg, sausage, and cheese mixture onto the center of the tortilla (about 1/3 of the width).
  14. Fold the sides inward, then roll tightly from the bottom to enclose the filling, tucking in the sides as you go.
  15. Repeat with remaining tortillas and filling.
  16. In the same skillet, add another tablespoon of olive oil or butter and heat over medium heat.
  17. Place the roll-ups seam-side down in the skillet (in batches if necessary).
  18. Cook for 2-3 minutes on each side until golden brown and crispy. Use tongs to flip carefully.
  19. Remove from skillet and place on a paper towel-lined plate to absorb excess oil.
  20. Slice each roll-up in half diagonally for presentation.
  21. Serve warm with salsa or hot sauce on the side. Add fresh avocado or sour cream for extra flavor.
