This Cheesy Chicken Avocado Melt combines tender grilled chicken, creamy avocado, and melted cheese on toasted bread for a delicious treat. It’s quick to prepare and perfect for a satisfying meal any time of the day.
Ingredients
Scale
- 2 cups cooked chicken, shredded or diced (about 1 large chicken breast)
- 1 ripe avocado, diced
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice (freshly squeezed)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 4 slices of your choice of bread (sourdough, whole grain, or ciabatta recommended)
- 2 tablespoons butter, softened (for spreading on bread)
- Fresh cilantro or parsley (optional, for garnish)
Instructions
- Start by gathering all your ingredients and preheating a skillet over medium heat. This should take about 3-4 minutes. Make sure the pan is hot enough so that when you add the butter, it melts quickly without browning too much.
- While the skillet is heating, prepare your chicken mixture. In a large bowl, combine the cooked chicken, diced avocado, shredded cheddar cheese, mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, and salt and pepper. Mix well until everything is evenly coated. This should take about 2-3 minutes.
- Once the skillet is ready, spread butter on one side of each slice of bread. Place two slices, butter-side down, in the skillet. Cook for about 2 minutes, or until the bread is golden brown. Keep an eye on it to avoid burning.
- After the first side is toasted, flip the bread slices over. Quickly spoon half of the chicken and avocado mixture onto each slice. Use a spatula to evenly distribute it. Cook for another 2-3 minutes, or until the mixture is heated through and the cheese begins to melt.
- Top each melt with the remaining slices of bread, butter-side up. Carefully flip the sandwiches with the help of the spatula and cook for an additional 3-4 minutes until the second side is golden brown and the cheese is fully melted. If you notice the bread browning too quickly, reduce the heat slightly.
- Once both sides are perfectly toasted and the cheese is gooey, remove the melts from the skillet. Allow them to cool for a minute before cutting them in half. This prevents the filling from spilling out. If you prefer a garnish, sprinkle some fresh cilantro or parsley on top before serving!

Keywords: Be cautious not to over-mix the chicken and avocado mixture; you want to keep some avocado chunks for texture. Using a non-stick skillet is key to achieving a perfectly golden crust without the bread sticking.
