  • 2 cups Cheddar Cheese
  • 1 1/2 cups Heavy Cream
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Creole Seasoning

Instructions

  1. In a large skillet or stock pot, heat the pan over medium heat. Add 1 pound of ground beef and cook for about 5 minutes, stirring occasionally. The beef should brown and no longer be pink. Drain any excess grease to keep the soup from becoming too oily.
  2. Add 3/4 cup of diced onion, 3/4 cup of diced celery, 3/4 cup of diced carrots, and 3/4 cup of cauliflower to the pot. Cook for an additional 5 minutes, stirring often, until the vegetables soften. You’ll know they’re ready when they become slightly translucent and tender.
  3. Next, reduce the heat to low and add 1 cup of cream cheese. Stir continuously until the cream cheese is fully melted and incorporated into the mixture.
  4. Then, stir in 1 tablespoon of tomato paste, 3 cups of chicken broth, and 1 1/2 cups of heavy cream. Increase the heat to medium-high and bring the mixture to a boil, stirring occasionally. You should see gentle bubbles forming on the surface.
  5. Once boiling, reduce the heat to low and season with 1 teaspoon of sea salt, 1/2 teaspoon of pepper, and 1 teaspoon of Creole seasoning. Simmer for 5 minutes, allowing the flavors to meld together. The soup should thicken slightly during this time.
  6. Before serving, taste the soup and adjust the seasoning if necessary. If it's too thick, you can add a splash of chicken broth to reach your desired consistency. Serve hot topped with additional shredded cheddar cheese and a sprinkle of Creole seasoning for an extra flavor boost.
