- 1 pound Ground Beef
- 3/4 cup Onion
- 3/4 cup Carrots

- 3/4 cup Cauliflower
- 3 cups Chicken Broth
- 1 tablespoon Tomato Paste
- 1 cup Cream Cheese
- 2 cups Cheddar Cheese
- 1 1/2 cups Heavy Cream
- 1 teaspoon Sea Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Creole Seasoning
Instructions
- In a large skillet or stock pot, heat the pan over medium heat. Add 1 pound of ground beef and cook for about 5 minutes, stirring occasionally. The beef should brown and no longer be pink. Drain any excess grease to keep the soup from becoming too oily.
- Add 3/4 cup of diced onion, 3/4 cup of diced celery, 3/4 cup of diced carrots, and 3/4 cup of cauliflower to the pot. Cook for an additional 5 minutes, stirring often, until the vegetables soften. You’ll know they’re ready when they become slightly translucent and tender.
- Next, reduce the heat to low and add 1 cup of cream cheese. Stir continuously until the cream cheese is fully melted and incorporated into the mixture.
- Then, stir in 1 tablespoon of tomato paste, 3 cups of chicken broth, and 1 1/2 cups of heavy cream. Increase the heat to medium-high and bring the mixture to a boil, stirring occasionally. You should see gentle bubbles forming on the surface.
- Once boiling, reduce the heat to low and season with 1 teaspoon of sea salt, 1/2 teaspoon of pepper, and 1 teaspoon of Creole seasoning. Simmer for 5 minutes, allowing the flavors to meld together. The soup should thicken slightly during this time.
- Before serving, taste the soup and adjust the seasoning if necessary. If it's too thick, you can add a splash of chicken broth to reach your desired consistency. Serve hot topped with additional shredded cheddar cheese and a sprinkle of Creole seasoning for an extra flavor boost.
