Instant Pot BBQ Pulled Chicken

  • Author: chefkiwi
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

This Instant Pot BBQ Pulled Chicken is a quick and flavorful dish perfect for busy weeknights. Tender and juicy chicken is coated in a sticky BBQ sauce that everyone will love.

Ingredients

Scale
  • 2 lb boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. Start by preparing your ingredients. Chop the onion and mince the garlic. This will take about 5 minutes. Having everything ready before you start will make the cooking process smoother.
  2. Turn on your Instant Pot and select the 'Sauté' function. Add a drizzle of oil and let it heat for about 1 minute. You’ll know it’s ready when the oil shimmers.
  3. Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion turns translucent and fragrant. Avoid browning the garlic as it can become bitter.
  4. Once the onion is ready, add the chicken breasts to the pot. Season them with paprika, black pepper, and salt. Sear the chicken for about 2 minutes on each side until lightly browned. This adds an extra layer of flavor!
  5. Pour in the chicken broth and BBQ sauce, ensuring the chicken is well-coated. Use a spatula to scrape any browned bits off the bottom of the pot to enhance the flavor.
  6. Close the lid of the Instant Pot, ensuring the valve is set to the sealing position. Select 'Manual' and set the timer for 15 minutes on high pressure.
  7. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then switch the valve to 'Venting' to release any remaining pressure. Always be cautious of the steam!
  8. After the pressure has fully released, open the lid and remove the chicken using tongs. Shred the chicken with two forks in a separate bowl for easier handling. It should pull apart easily!
  9. Return the shredded chicken to the pot, mixing it with the remaining sauce. Let it sit for a few minutes on the 'Keep Warm' setting to absorb the flavors before serving. If it looks too dry, add a splash more BBQ sauce.

Keywords: One common mistake is overcooking the chicken. Stick to the 15-minute cooking time and be sure to allow for natural pressure release for maximum tenderness.
